
• 100g Pancetta –cubed
• 1 Vine tomato
• 3 slices Halloumi cheese
• 20g micro rocket salad
• 500ml olive oil
• 250ml balsamic vinegar
• 1 clove garlic-pasted
• 5g salt
• 5g pepper
• 5g sugar
• slice tomato three times thinly
• once pancetta is cubed, shallow fry till crispy
• grill halloumi cheese till marked
• place tomato slices down evenly spread
• place grilled halloumi on top of the tomato
• place crispy pancetta around the tomato and halloumi
• sprinkle micro rocket salad over
• dress with vinaigrette
